Weekend Scenes

This type of weekend may sound very lame to some of you, but for me, it was terrific. For me, I need these weekends every now and again where I tear open the cabinets and rearrange everything. Where I make a delicious soup, put clean sheets on the bed, scrub the floors, write to my little heart’s content and sit with wet hair while I watch the snow fall with a warm coffee in my hands.

We all have these highs and lows — times when we feel creative and bursting with energy. I’ve had what feels like a “coffee high” all weekend and have loved every single second.

On My Nightstand

Let’s face it, what book isn’t on my nightstand at the moment. I can NOT for the life of me stay interested in a book. The only books that I am obsessed with at the moment are cookbooks and Eat Pretty Every Day, which I read straight through instead of daily.

There is a book, The Clockmaker’s Daughter by Kate Morton, who happens to be my favorite author. I’ve been holding onto for a rainy day & I think I’m going to break it out this evening. It’s a snowy day anyway!

Recipes on the Agenda

Making it through 3 weeks of meal prep has made me more proud than you will ever realize. The first time I ever tried to meal prep I spent hours in the kitchen because the meals were a bit too complicated. Luckily I had this in the back of my mind when I began Whole30, so I decided to keep my breakfast and lunch meals simple for the week. Soft boiled eggs, bacon, & greens have become a breakfast I quite enjoy. For lunch, I usually make a salad or soup that will have enough protein to get me to dinner. Then dinner is where the real fun begins and feel like my treat at the end of the day.

The Whole30Recipe account on Instagram is something I highly recommend to both my fellow Whole30’ers & anyone looking to eat healthily. We tried Orange Chicken last week & I honestly can’t get it out of my head, it was that delicious. I even went to ChihYu’s website and downloaded her Whole30 cookbook!

Sweet Pepper Past with Sausage – (this recipe is not Whole30 compliant. However, I’ve got some tricks up my sleeve to make it that way, I’ll share what I come up with)
