Monday Drive: Better Late Than Never

Another Monday has already passed. I’m laying in bed on a Tuesday night scanning my computer for viruses and reeling over way too much lavender.

Surprisingly, even with doing Whole30 and planning a wedding, I am remaining reasonably calm. Or maybe that’s the lavender talking. Everyone says that lavender mixed in avocado oil is a real treat for your skin. Those people either a) used less than I used or b) are suffering from significant sinus issues.

Weekend Scenes

On Friday after work, I spent a rainy evening at home with a couple of my besties, Grace & Frankie. I can’t get over how much I love this show and how happy it makes me. It’s right up there with Younger & Gossip Girl.

Saturday night I got to see one of my favorite actresses, Sutton Foster sing with the St. Louis Symphony. I basically died and went to heaven.

Sunday, we went for a hike at Castlewood Park. M had to drag me, kicking & screaming, I was so worn out and didn’t feel like trudging through the wilderness. But I did it and enjoyed the fresh air and time with him.

Inspiring Me Right Now

I like everyone else in America is 100% obsessed with Lady Gaga and Bradley Cooper. Ask me how many times I listened to Shallow today? Well, we don’t have enough fingers to count. I’m singing along like a rockstar, although I sound more like Bradley Cooper than Lady Gaga, a bit distrubing.

On My Nightstand

This week, I’ve started WorkParty by Jaclyn Johnson. I highly recommend this for anyone who is looking for a good kick of motivation. It’s super impressive and motivating for me to see someone who basically came out of the gate swinging and went after what they want.

Recipes on the Agenda

There have been pre-made breakfasts and lunches for two weeks! We have tried a little bit of everything, but honestly, I’ve found my favorite recipes for Whole30 in their cookbooks. If you ever decide you’d like to do Whole30, I would recommend buying the Fast & Easy cookbook and the original book. They are both 100% worth it.

This week my favorites have been a Thai Chicken and Brussel Sprout Skillet & Creamy Turnip & Leek Soup.

The Thai Chicken recipe is very simple. Brussel sprouts, carrots, salt, shallots, and chicken. With a yummy homemade Asian citrus dressing made with orange, ginger, garlic, and coconut aminos.

Creamy Turnip and Leek Soup is also just as easy. With zucchini and some spices you mix everything together in a pot to boil. Then use an immersion blender to make it beautifully creamy and delicous.

Thanks for letting me check in this week, even though it was a bit of a stretch on timing. I’ll leave you with this little thought because it took me 30 minutes to dry my hair tonight and I don’t know if I ever want to do that again…

And I only am asking Siri because Alexa has it out for me! HA, night friends!
